This coffee is meticulously dry processed at the Idido Cooperative, just east of Yirgacheffe, Ethiopia, in some of the highest-altitude growing areas in the region. Following a 60 hour fermentation in steel tanks, this coffee is sun dried and agitated by hand over a period of several days, ensuring that each coffee cherry has an even sun exposure time. This process is excellent at retaining the acidity and clarity in the fruit and floral notes present in the coffee. In the cup, you will experience notes of juicy fruits such as kiwi and lime, and the smooth quality of cocoa in the finish.
